The Iphone 3G has been unlocked using a software called YellowSn0w. This small daemon runs at IPhone boot time and enables the use of any SIM Card. For this to work make sure you've 2.28 Base Band and 2.2 Firmware. To check the base band go to Settings-General-About-Modem Firmware it should have 2.28.00 .
This is not a tutorial, and as always I will take no responsability. I've used the following method:
1st : Get the 2.2 Firmware -> http://appldnld.apple.com.edgesuite.net/content.info.apple.com/iPhone/061-5778.20081120.Aqw4R/iPhone1,2_2.2_5G77_Restore.ipsw
2nd : Open iTunes to get the upgrade done, and chose the file iPhone1,2_2.2_5G77_Restore.ipsw to upgrade. 
3rd  : Let's Jailbreack it, get QuickPWN or PwnageTool and use again iPhone1,2_2.2_5G77_Restore.ipsw. 
4th  : Now you should have Cydia and Installer Icons, add installer or Cyndia the sources/repos described in http://www.yellowsn0w.net/search/label/download%20yellowsn0w
5th  : Go to Installer/Cyndia and search for yellowsn0w and install it. 
6th  : Reboot
7th  : Done
